I purchased two knives from this SETO "I-" series - I-8 Mini "Santoku" and I-5 Santoku.

Model: I-8 - This is called a mini santoku, and I almost missed/dismissed it because of 
the name. I-8 is more like mini "deba", than the typical santoku shape - and makes a 
very good utility knife. Bargain priced even allowing for shipping from Japan 
(shipping is not cheap - but reasonable considering it is EMS - Express Mail Service).

The clad vg10 core tsuchime (hammered) finish damascus blade is very good looking, 
and the hammered finish is supposed to help release food. VG10 is one the best stainless 
steels for kitchen cutlery - majority of quality Japanese stainless cutlery use VG10.


Like most quality Japanese cutlery this is very sharp and cuts through food very well.

The handle is also very noteworthy - it is in the traditional Japanese D-shape
 (or Wa handle) - but it is black pakkawood (epoxy resin laminated wood) with a 
cocobolo collar - so it requires less maintenance than traditional ho wood
 ("honoki" - magnolia obovata).

I find the handle comfortable as I use a choked up grip with the index finger along 
the spine - this allows for more precise cutting.

Buying more than one knife from this listing combines shipping - my one additional 
cost only $5 extra shipping - service from Samurai Market was very fast - I ordered
 on Friday and received on Tuesday.

At the same time I also purchased the I-5 Santoku - all the remarks above for the 
I-8 mini applies (except for obviously the size and purpose).

I really like Santokus - I realize many disparagingly call them Japanese housewife's
 knife for small kitchens - and recommend Gyutos instead, because they are more
 like western chef's knives. But the Gyuto is not traditional either - as it is merely 
the Japanese version of the western chef!

I much prefer the broader/wider blade of the Santoku - the gyuto blades are too 
narrow compared to a western chef - Santokus are better at flattening or crushing
 eg: garlic etc., and I like the 7" length for home kitchen use - if I worked in a
 professional kitchen - things might be different - but I prepare food at home.

Think of it - there is a very good reason why Santokus are popular in Japan when 
they have the whole spectrum of cutlery to choose from -
then watch the Essential (Jacques) Pepin on using a knife - what is he using? a Santoku!!!

This brings me back to this I-5 SETO Santoku - it is slightly longer at 180mm than 
the usual 165mm - but then add to it the neck (emoto), then the tip is actually 
almost 7.5" from the handle. So it's noticeably longer than normal - although still 
very usable - it is not quite ideal for me - I prefer my (Shigeki) Tanaka vg10 
damascus Santoku (with Wa - or Japanese Ho wood handle) (please see the
 size comparison photos I uploaded, links in comments).

But this SETO I-5 Santoku is still very good and certainly an exhibition piece
 with its tsuchime/hammered damascus blade.

Both the I-5 and I-8 are very, very good - and very good value for what are
 premium knives (eg: the Shun Premier Santoku Knife, 7-Inch is $180)
But it's the I-8 mini "Santoku" that was the real discovery/revelation for me.

This knife is the best kitchen knife I have ever used. You can tell it is a quality piece
 and easily worth double what you pay for it. My wife uses a fancy looking
 "Rachel Ray" chef's knife of similar size and the quality differences are extremely
 apparent. Hers is a heavy beast that takes forever to sharpen and dulls easily.. 
sure you can hack through bone with it but it's just not made for precision. 
The Seto is thin and absolutely razor sharp... and easy to keep that way. 
The VG10 steel sounds beautiful when you sharpen it, unlike that "other" 
knife that sounds like scraping a tin can down the sharpener. For the price
 I would highly recommend this brand. The wood handle has held up to years
 of washing and aside from the tiniest bit of fading it hasn't really aged at all. 
I own Seto kitchen knives in other sizes as well.

This is a very well crafted Japanese petty knife. I use it everyday for 
smaller cutting tasks. I have several hand-forged Japanese high carbon 
steel kitchen blades. Though they are superb performers, their use and 
maintenance takes a bit of care. You can't just cut something then put
 it down without wiping the blade or you will have rust issues. 
While gentle oxidation and patina aren't a problem, you don't want 
foods like onions, tomatoes or citrus to damage the blade.

This laminated petty knife with the VG-10 steel is much easier to use
 without having to worry about it staining or rusting. The steel keeps
 an edge far better than any German make at higher prices. Also, the
 shallower angle of the grind makes for superior slicing. While it is intended
 for small tasks, it has become my go-to knife for boning poultry and I prefer
 it over western styled boning knives. The dimpled surface of the blade
 while giving it a nice unique look also helps to keep vegetables like cucumber
 and onion from sticking to the side of the blade.

At the price offered, it is an excellent buy. I am considering purchasing 
other knives from this maker.

I got mine from Samurai Market's ebay site.

These are very nice looking knives at this price point, but there were a few 
negative -but fixable- exceptions for me. First, sharp edges 
(other than the cutting edge). The handle ends are not chamfered,
 not so much an issue for the rear of the handle, but if you pinch-grip like I do,
 the front is a little uncomfortable. Second, the spine. 

Again, if you pinch-grip it's uncomfortable. The third issue is purely aesthetic. 
The logo/writing, I don't care for loads of writing on my knives, especially 
not smack in the middle of the pretty damascus part. I sort of figured the 
letters were just paint and could simply be dissolved and scraped off, however,
 underneath the paint there's a couple mils worth of etching that the paint sits in. 
I carefully fixed all of these issues with various grits of sand paper (100-1000),
 and DMT bench plates. Fourth, the edge. It's slightly heavier on the left side
 (I wanna say about 60/40), and I don't think that was intentional
 (I know Japanese blades often have asymmetrical grinds, but if thats the case
 this one would be for set up for a southpaw). The bevel is also kinda steep
 and not terribly sharp (I have very high standards for what I consider sharp though).

 I didn't measure exactly but I want to say the stock primary bevels are 
at least 40* inclusive. Not that any of that surprised me, and all three are easily 
fixed if you got some patience and the right tools. I used my DMT ABG Clamp, 
and the XC/C plates to take the primary bevel down to the lowest setting on
 the guide (probably about 28-30* at this blade's width). I then took the finish
 down to 8000 on a DMT bench plate and a Norton combo stone.

Now, you might say, good god that's a lot of work, and you'd be right, it was. 
But for me, it was worth it. I love working with my tools, getting to know their
 shape and feel, and tailoring them to my needs.

There are arguably better, more serviceable, knife steels out there (AEB-L for instance),
 but VG-10 is nothing to scoff at, and many big names like Shun and Zwilling use it. 
The VG-10 is a pretty good steel for low maintenance knives (which also makes
 it tougher to work, hence the DMT stuff).

A side note to people that want a knife that never needs to be sharpened, this isn't it, 
all knives get dull and will need to be sharpened at some point.
 The VG-10 is no exception. It'll will take a good edge, and hold it for reasonably 
long time, but sooner or later you'll have to put it to the stones.

Some other things that I wasn't keen on (see what I did there? that's knife pun)
 were some light tooling marks/scratches on the tsuchime areas. I left these 
alone and chocked them up to wabi-sabi. Removing them would mean removing
 the patina, and I really like that aspect of the blade. Also, the D-side of the
 handle has a bit of a flat spot along it's length that shouldn't be there. 
Though it would be a very easy fix, it doesn't bother me enough to do so. 
There is also almost no distal taper, the blade appears to be just under
 2mm all the way out to where the spine curves down to the tip.
 I guess the lack of taper's pretty normal with Japanese knives thought.

The knife is slightly handle-heavy, the balance point is on the ferrule, 
about an 3mm back from the blade.

All that said, I still reeeally like this knife! The patinated tsuchime / polished 
damascus, and the sandalwood / pakkawood contrast each other beautifully.
 After the work I put in, the handle and spine feel great now. The new,
 more acute 50/50 edge cuts like one worthy of the steel it's made from.
 It's a real pleasure to use, when I don't have room to pull out my chef's knife. 
Small enough to do detailed stuff or garnish, and still big enough to motor 
through dicing a few onions and tomatoes for pico de gallo.

Pros:
Beautiful - tsuchime damascus, VG-10 core. Excellent at this price point.
Nice looking handle, ferrule, and ferrule plug (don't know what else to call it,
 theres a little piece of metal in there with a bamboo motif on it).

Cons:
Slightly uncomfortable human interface edges. Acceptable at this price point. 
(Easily fixable)
Not razor sharp out of the box. Expected and acceptable at most price points.
 (Easily fixable)
Ugly, superfluous writing. In my opinion, bad at any price point.

Bottom Line:
There are far better performing knives with far better finishes out there, 
but not at this price (I paid 35+17 S/H). Sure, I'd love something from 
a maker like Devin Thomas, but until I win the lotto or sell a kidney, or a kid, 
I'll be pulling the trigger on deals like this.

First of all, I am a home chef that cooks every night and I love my knives 
but I am not a professional. My purchase was the 150mm petty, 
which I don't see for sale anymore.
Blade and Steel: The VG-10 is a great stainless steel. 
Their version sharpens of wet stones quickly and holds an edge for a decent amount of time.
 The slight up sweep of the blade is excellent for slicing but still 
has a fairly large sweet spot. I usually prefer a carbon steel knife in the 
kitchen but this is a great job with VG-10.
Fit and Finish: The knife looks great. The hammered Damascus is a beautiful pattern. 

The ferrule is flush with the handle and the D shape is the classic Japanese shape and 
feels good in the hand. I like the colored marking on the blade that adds a unique finish.
So why a 4 star rating? The small things in life make all the difference. 

The knife is too short (27 mm vertically).The blade is really only useful in a 
pinch grip and even then there is not enough clearance for anyone's knuckles. 
The "bolster" has no clearance. This is not a huge thing overall because 
it is just a petty knife but it is still something that prevents it from being a 5 star knife.
I would try another of their knives without hesitation.

Purchased as a Wedding present, put it through a few basics gently before 
sending it along to ensure it was worth giving.

Shipped quickly from Osaka, sailed through customs, packaged correctly and 
arrived free of defect.

Nice clean pattern in the steel, very attractive in full sunlight, Nice little leaf
 accent touch where the tang goes into the handle. The ring of Cocobolo wood is bright,
 and even though red is not one of my favorite colors, it looks good.

Factory edge on this one is enough to pass through paper without resistance, 
Handle is very slightly raised on the right hand side for grip. The blade is light 
and very nimble feeling in my palm-a-basketball hands.

Would buy another if I didn't have to get the kids ready to go back to school.
 Build quality is very much on par with the price.

This is a beautiful very, very sharp knife.When I received it I very lightly touched
 the blade and it was Band Aid time! The blade is dimpled, which hides 
the Damascus ripples, but it is very attractive. I haven't used it that long but
 I suspect that as its dulls I'll be able to restore the sharpness. 
The handle is typical Japanese and the knife is well balanced. 
I highly recommend this knife.

Amazing. My first knife that costs 'some' money. When opened at work after delivery, 
1st thing everyone said is to place it on a display behind the glass as it is 
too good looking. True. Beyond the look the knife is a fantastic tool. 
great steel quality, Sits very good in my hand. Sharp from manufacturer,
used it for few months now and still sharp. I know that this kind of knives 
are sharpened every 2 weeks or so, when used by chef. Mine is only for domestic use, 
and is not the only knife in my collection, so i expect to touch the stone only
 every few months.
Great buy, looking forward to get more Seki knives

A beautiful knife at one of the best prices going. Its shape seems to be between
 the classic santuko style and the western chefs knife which suits me. Sharp! 
Tried the paper slicing, cutting tomato (without holding the tomato!) and other 
tests found on the internet! I thought its balance was a somewhat foreword until 
I realised that it its design is for the "three fingers around the handle and pinch 
the side of the blade with finger and thumb" style grip; then the balance point is 
right at the pinch point. This grip seemed to be favoured by a number of chefs
 on internet videos and gives a very secure and safe grip. Not sure how its 
sharpened but it seems to be a Japanese 30/70 edge. I think I have couple of
 months before I need to figure out the best way to keep the edge but I've 
bought a whetstone and I am going to practise on one of the many cheap 
blunt knifes in the kitchen drawer.

I purchased one knife to start with just to see how good they are and since 
I started using my new knife I don’t take my old knives from the drawer. 
The knife is as sharp as a shaving blade and so I carried out the grape test.
 To test the sharpness I cut one grape length way, set the grape down on
 the chopping board flat face down and I managed to slice of the top of the 
grape without holding the grape down. Great product! Two more SETO knives are 
on the way.

Hand's down one of the best kitchen blade's I've used. Always wanted a
 professional-grade knife like this, but couldn't afford the knives that cost 
several times more. Having developed a good cutting technique,
 it seemed like a good idea to spring for a more costly knife, but this one
 cuts and handles better than knives far more expensive. It's like upgrading
 from a budget guitar to a Fender stratocaster and really rewards good technique.

It's nicely balanced and fits my hand as if it were a part of it. Glides through
 pretty much anything. Sharp enough to shave with, and certainly easy to maintain.
 Really worth the wait!

Very nicely made, well balnced. Bought this for slicing and chopping and
 its a delight to use. Very sharp as you would expect.
Not for the dishwasher!! This is not a problem but you should note it is not
 stainless steel so it needs careful washing and cleaning but will reward with

This knife isn't as ergonomic as some I have used, 
but I expected that to some degree. I've found it ever so slightly clumsy
 to use for chopping in the traditional cheffy way, but not so much that it's
 a a significant problem. It makes up for this by being razor sharp with an 
edge which lasts a reasonable time. It is easily honed with a sharpening-steel
 and the steel of the knife itself seems softer than my Henckels knives. 
It's very aesthetically appealing and the blade in particular is very attractive.
 It looks good on my large oak chopping board. I think I might've preferred
 it if it was a Santoku shape rather than a traditional chef's knife.

yes these knives are better than photos show.
very sharp from the box and have remaind so.
I am shore these blades are the equal of much more exspensive knives.
 ie double the price.
please don't use a steel to hone they need a strop and wet stones 
when they do eventualy need sharpening

I was looking for a small japanese knife after investing in a $$$ suishi knife
 a numbers of yrs ago. My thought being that a good knife which is made 
from japanese steel will last you a life time. Anyway Id stumbled across this 
one on Amazon .. and brought it after all the reviews. I can say that I was 
not disappointed at all as the knife is of excellent quality. Being made from 
VG10 steel..it is sharp from the factory and is now really sharp (shaving sharp)
 after I'd put it through a Tormek ! Though of you who dont know what a 
Tormek is .. just look it up in YouTube.
Anyway..I have today also ordered the longer blade knife and am looking 
forward to it arriving too. Delivery from Japan is fast so just order your today !

Good communications from the seller and the knife came directly from Japan. :) 
I was pleased as punch to find that the metal was of excellent quality.
 I am still using the factory sharpness even after weeks. Some flaws are:
 the spine is not smoothed out, the thickness of the nakiri usuba (vegetable)
 knife is way too thick. I am certain that this would have been a better knife
 if it was thinner. It would not be less strong if it were thinner, so I don't know
 why they did not make it much thinner.The dimples are not enough to prevent sticking.
 It still deserves 5+ stars because if I could I would give it a 6 or 7. Why?
 because it is just excellent in so many ways. The small 7cm knife is superb.
 The other mini santoku is my wife's favourite for meat because it is light and 
cuts like a hot knife through butter.

*** Additional observations and thoughts after 6 MONTHS OF USE ***

1)Honing tips: I have only had to do the gentlest of leather strops to get it back
 to the factory sharpness (if not more). Even extra fine stones and diamond
 whetstones are way too coarse and NOT advisable as this knife is capable
 of a very fine edge. -> This ultra fine sharpness stays good for 2 months of 
everyday use!

2)It has become a frequently used knife. So far it has been 100% stainless. 
We are a family of five and our kitchen is a busy place. So not having to worry 
about the knife being wet is good.

3)Storage tips: Do not throw it naked in a cutlery drawer or knife block if you
 can help it. If you can find a wooden tray or box to store it safely then that is
 best as this is a sharp knife with a very long taper. So the knife gets very thin 
halfway from the top, or the spine as it's called. We still use the paper box it 
came in which is inside a drawer. So in my opinion it is a good idea not to throw 
away the little cardboard gift-box it comes in!

4)After 6 months of use I still think it deserves more than 5 stars! Thanks for reading.
